Ingredients:2 cups cooked soybeans; 1 grated raw short carrot; 1 minced apple; ½ cup seedless raisin; some olives, diced onion, fresh parsley, spring onion, salt, limon, and extra virgin olive oil. Description:Wash well the grains, drain, place into a large pot and add water as needed to keep beans just covered with liquid. Bring to a boil over high heat. When it is boiling through away the water and cover again with cool water and bring to heat again. Repeat this action twice and heat until it is soft. The best rule is to test frequently during cooking, then come to your own decision when beans are tender and taste "done". Drain the cooked soy, put in a tray, add the grated carrot, the raisin, the apple, taste salt, squeeze limon, parsley and spring onion, the olives, and the chopped onion. Pour a little extra virgin olive oil onto the salad. Ready to serve. ![]() |
