Soybean Salad with Moyashi

Ingredients:

1 plate of baked soybean; 1 smal plate of moyashi; 2 tomatoes, pelled and chopped; ½ cup of parsley and spring onion, chopped; 2 garlic cloves, minced with fresh ground pepper; 1 small onion, chopped; 1 tbsp canola oil; salt; a trickle oil.

Description:

Parboil the moyashi (bean sprouts) briefly and drain. Rinse into cold water and drain again. In a serving plate place the baked soybean, add the moyashi, the chopped tomatoes and salt. In a frying pan, heat the oil, add onions, add the garlic until translucent but not burned. Spread it over the salad and mix carefuly. Sprinkle the parsley and spring onion, add drops of extra-virgin oil and serve. Bonan apetiton!
