Chicken Breast Salad

Ingredients:

2 chicken breasts; 1 tomato; finely carrot sticks; some seedless olives, chopped; finely green, yellow, and red bell pepper sticks; 2 cloves garlic, chopped with ground fresh pepper; 2 tbsp onion, chopped; parsley and spring onion; salt; extra-virgin olive oil; aluminium foil paper; balsamic vinegar.

Description:

Cut the chicken breasts into finely lengthway fillets. Place them in a bowl and season with salt, garlic. Stuff each fillet with the sticks and olive pieces, roll up them. Wrap each fillet in a piece of aluminum foil. Pay atention if it is well closed, place them in a large pan, cover with water, and bring to a boil over medium-high heat and cook, covered, until reduce by half. Let soak for a few minutes the onion slices in a vinegar. Remove from the heat and let cool before removing the aluminium foil. Place each fillet on a cutting board, cut into round slices. Then, they will show the colored inside. Place them on a serving plate. Dice up the tomato, place over them. Add parsley, spring onion. Drain well the onion slices and place over the salad. Spill some olive oil and serve.
