Baked Fish with texturized Soy Protein

Ingredients:

4 or 5 fish fillets (about 3 pounds); 1 cup texturized soy protein; ½ cup onion, chopped; 3 cloves garlic, crushed with in natura pepper; 2 tomatoes, peeled and seedless; parsley and spring onion, chopped; salt; 2 tbsp vegetable oil; 2 tbsp grated parmesan cheese; 2 tbsp breadcrumbs; 2 tbsp rooledoats;

Description:

(You may certainly ask the fishmonger to cut your whole fish into fillets and reserve the head, gill and tail to garnish the plate.) Cover the soy protein with boiling water and let stand about 10 minutes. Dice all the fish fillets. In a pan heat the oil, add the onion, the garlic, the tomatoes, the diced fish fillets, salt and let cooking until it is a homogeneous mixture. Taste the season. Squeeze out excess liquid of the soy protein with your hands or by a potatoes squeezer and add to the fish. Let cooking about 10 minutes. Add the rolled oats and let cooking for a few minutes. Add the spring onion and the parsley. Remove the mixture from the heat, place on a serving platter and using the hands to give mixture the original form of the fish. Wash and drain the garnish fish parts and complete the fish form with them. Mix the parmesan and the breadcrumbs, spread over the fish, press with the hands, and let to oven for a few minutes until is melt the cheese. Serve hot.
